With respect, support for PHP 5.6 ended in December 2018 so you've had a fair bit of warning. Arguably, you've been living dangerously for more than 7 years and you're pretty lucky not to have been hacked in that time (or have you?). I would guess your shopping cart software is in a similar situation.
Thankfully, I've now changed the discussion forum that uses PHP 5.6 to read-only, and hoping to continue not being hacked.
Worst issue though is when you are happily on a plan that has 5.6 then you wake up the next morning and the server has been updated and 5.6 is no longer there. Of course, there was never any published promise of 5.6....

Going forward, you could of course get a VPS and run any version of software you like on it, but for most people that would be money down the drain. I would spend the time and effort on a migration script instead to get everything up to date. I've done it several times (shopping carts, ticketing systems, CRMs) and nowadays AI is actually pretty good at writing scripts like that. Whether it's worth it depends on how many products and customers you have - if it's fewer than say 100 it might be quicker to just copy and paste them by hand.

I don't think most hosting providers can truly promise an outdated PHP version will continue to always be available going forward.
Many providers rely on CloudLinux's alt-php and if they're removed, most providers would just move on from them, rather than go out of their way to find an alternative or harden the version themselves.

There are many shared hosting providers that support PHP 5.6, but why not just update the shopping cart application to avoid all of the complications that arise from using outdated code?
There are some providers that will going to allow to have PHP 5.x on their Cloud, VPS or Dedicated server offerings - however, beside known security risk factor, in most cases you end up with no actual support if/when things going to wrong due to EOL for PHP 5.x branch.
As others saying - I know it could a bit painful (in shorty term) to move your coding for latest PHP versions (8.x branch currently) - you should consider this is as your primary option and cost of doing business.
We deal with customers "married" to their PHP scripts from decade or more old on ongoing basis - yet, once they move to something more modern, hardly anyone complain.

Even providers that offer 5.6 still - you’re going to start running into issues connecting to and working with MySQL and MariaDB.
Upgrading the cart itself is what I would push for personally. Eventually you’ll come across a barrier to running the old software you can’t easily cross.

Wouldn't the greater concern be how secure the shopping cart script is, if it still requires PHP 5.6?
If the script hasn't been updated in a while, then I would be concerned with security holes that the developer of the script has just ignored.

Most CloudLinux based still have alt-php56 basically a hardened version of PHP 5.6 but to be completely honest with you, If this shopping cart you have for years doesn't have an updated version now that PHP 8 is even out, you might even consider a migration? I understand migrating is an undertaking sometimes but PHP 5.6 is eons to old, and out of date even if CL provides a hardened version which is being security supported.
In any case, most CloudLinux based servers will support it, but like stated above you may consider migrating or upgrading if the vendor has given a new version
